  • 2 tbsp coarse sea salt
  • 2.7 kg tri-tip, bottom sirloin primal beef cut
  • 7 medium-sized carrots
  • 3 parsley roots
  • 1 celeriac
  • 2 leeks
  • 5 celery stalks
  • 1 fresh garlic head
  • 4 onions
  • 1 tsp white peppercorns
  • 1/2 tsp allspice
  • 1/2 tsp juniper berries
  • 8 cloves
  • 2 thyme sprigs
  • 1 rosemary sprig
  • 3 bay leaves
  • 80 g butter
  • 50 g plain flour
  • 1 l milk
  • 1 kg red-skinned potatoes
  • Salt
  • 250 ml double cream
  • 4 tbsp crème fraîche
  • 1 lemon
  • 1 tbsp sugar
  • 1 fresh horseradish
  • 1 bunch chives
  • Freshly ground white pepper
  • Freshly ground nutmeg

    Bring water and salt to a boil in a large saucepan. Add the beef and cook for 1 hour over medium heat. In the meantime, peel and wash the carrots, parsley roots and celeriac. Remove the roots and the dark green part of the leeks. Halve the leeks lengthways, rinse under running water and cut into pieces of 10 cm. Remove the light colored leaves from the celery stalks and set aside. Slice the celery stalks into pieces of 10 cm. Cut the root ending from the garlic head and 3 of the onions and slice the onions in half.
